
ANDALUSIAN GAZPACHO WITH WATERMELON
Ingredients
- Watermelon (approx. 500g)
- 1 Tomato
- 1/3 Peeled cucumber
- 1/3 Green pepper
- Garlic (half a garlic clove)
- Red pepper
- 3 Tablespoons of vinegar
- 3 Tablespoons of EVOO
- Iodised salt
Method
Dice the watermelon, tomato, pepper and cucumber (also peeled). Mix everything together with the other ingredients and put in the fridge for a few hours to serve cool.
