ANDALUSIAN GAZPACHO WITH WATERMELON

Ingredients

  1. Watermelon (approx. 500g)
  2. 1 Tomato
  3. 1/3 Peeled cucumber
  4. 1/3 Green pepper
  5. Garlic (half a garlic clove)
  6. Red pepper
  7. 3 Tablespoons of vinegar
  8. 3 Tablespoons of EVOO
  9. Iodised salt

Method

Dice the watermelon, tomato, pepper and cucumber (also peeled). Mix everything together with the other ingredients and put in the fridge for a few hours to serve cool.
