CUCUMBER RAITA
Ingredients
- 2 cucumbers
- 2 natural unsweetened unskimmed yogurts
- 2-3 tablespoons of coriander leaves (or parsley if you prefer)
- 2-3 tablespoons of peppermint
- Iodised salt
Method
Chop the coriander and peppermint leaves. Peel the cucumber, cut them in half longways and cut into half-moons or cubes. Then mix the yogurt and cucumber and herbs. Season with ionised salt. Raita is a very refreshing Hindu dish that can be used as a condiment or a salad.
